Bacon Style Elote


  • 6-8 Ears of Corn, husked
  • crema or mayonnaise
  • Cotija cheese
  • 1 cup chopped bacon
  • 1/2 cup green onion, chopped
  • 2 lemons
  • chili powder
  • fresh Cilantro, chopped


  1. Heat a grill to medium-high heat and add corn. 
  2. Grill on each side for about 4-6 minutes until some kernals begin to darken.
  3. Remove from the grill and immediately spread crema over the corn. Sprinkle lightly with cotija cheese, bacon, green onion, chili powder and lemon juice.
